I am in the process of purchasing a new viking, I've found a 2018 ranch edition that I like thats already outfitted with most of the accessories, but I've also found a brand new 2015 model at a dealership that I can get saving over $3k and will still come with full warranty plus the 30 month Y.E.S. that they are offering. Does anyone know if there are any major changes from the 2015 to 18 models that would justify the extra cost?

2016 received sound insulation kit and engine damper. Both are retrofittable to older models. Parking brake warning buzzer also started in 2016. In addition, the newer models aren't as likely to have the middle drive gear bolts coming loose, but if you're getting the 30 month YES warranty, you should be OK so long as your dealer's service department is worth its salt, if not then the warranty is worthless. I would wait until June as new models\options will most likely be coming out.
